Forageable Greenhouse Tablescape with The Gramounce, in collaboration with Aquela Kombucha, for Ponto d'Orvalho ecology festival in Portugal.

The menu for this forageable tablescape was inspired by the landscape around the Freixo do Meio agroforestry farm, where Ponto d'Orvalho festival takes place. Using local ingredients, foraged foods, and greenhouse-grown produce, guests were taken on a culinary journey exploring how the farm interacts with the landscape it sits in.
