After a trip to Japan; I'm was filled with inspiration for things to make from the vegan food that I tried while away. Here's my version of fuwa fuwa tofu (soft soft tofu): a dish I was served at a vegan halal ramen bar I went to on my first night in Tokyo! Sweet and tangy and creamy all at once, this is a deliciously refreshing appetiser!
Takes 5 minutes (5 prep)
200g silken tofu
6 tbsp water
1/4 cup (40g) cashews
juice of half a lime
1 tbsp ginger
1 tbsp dark soy sauce
Blend all the ingredients, apart from the soy sauce, until they are smooth.
Serve the fuwa fuwa in a small bowl and pour the soy sauce on top.
Mix the dish before eating, enjoy straight away.
