Naturally Sweet: Lime & Cocoa Nib Protein Balls

Salty yet sweet, only 6 ingredients, and made in under 10 minutes: a couple of these before the gym this morning and I'm set for a workout. Packed with fibre, protein, nutrients, vitamins and more, store them in the fridge for up to a week; for when you need a quick boost of everything!

Makes 10

Takes 10 minutes (10 prep)

1/2 (90g) cup of pitted dates

3/4 cup (115g) of peanuts

1/2 cup (90g) of cocoa nibs

1 tsp of hemp protein powder

1 limes zest

Pinch of salt

Soak the dates in boiling water for 5 minutes, making sure they’re completely submerged.

Using a food processor, whizz up the almonds until they are finely chopped. Take out a 1/4 cup (30g) and set it aside to roll the balls in.

Add the cocoa nibs, drained dates, hemp powder and lime zest to the food processor, with a pinch of salt, and pule blend until all the ingredients are combined.

Using a tablespoon to measure, roll the mixture into balls and coat in the remaining chopped peanuts.

Keep the balls refrigerated in an airtight box. They will keep for up to a week.
