Such a delicious and simple recipe, this peppery pesto is packed with nutrients and healthy fats and goes well with anything! Just 6 ingredients, and not even 10 minutes in the making, it is perfect for when you need to make a quick week-night meal in the evening, or to keep in the fridge just-in-case!
NOTE: If you'd rather s different nut, this recipe works with just about any!
Takes 10 minutes (5 cook, 5 prep)
1/2 cup (70g) of almonds
1 large handful of rocket
2 tbsp of olive oil
2 garlic cloves
Preheat the grill to 180C.
Toast the almonds for 5 minutes.
Pulse the rocket in a food processor until well chopped. Add the almonds when they’re done, and add the rest of the ingredients, seasoning it to taste. Pulse the ingredients until they are well combined.
Store in an airtight container for up to a week.
