Speedy Grilled Avocado with Fresh Salsa

Don't be deceived by the number of ingredients, this dish is so easy it can easily be made even if you're in a rush to leave in the morning. Packed with healthy, long-lasting energy from the avocado and rich in vitamins from the fresh salsa, this dish will prepare you for whatever day you have ahead.


Serves one

Takes 10 minutes (5 prep 5 bake)


1 ripe avocado

2 tbsp of olive oil

2 tbsp of soy sauce

1/4 of a cucumber

1 ripe tomato

1/2 small romano pepper

1 small bunch of coriander

1 tsp balsamic vinegar

1/2 a limes zest

1/2 tsp of chilli flakes


Preheat the grill to 180C.


Halve the avocado, remove the stone, and cut a 1cm grid on each half, without piercing the skin through the flesh. Trickle 1 tablespoon of the olive oil and 1 tablespoon of the soy sauce in turn across the two halves.


Place both halves on a baking tray on the top shelf and grill for 5 minutes, or until the oil begins to sizzle lightly and the avocado flesh starts to swell.


As the avocado grills, finely dice the cucumber, tomato, pepper and coriander, adding the remaining wet ingredients, season to taste, and mix thoroughly in a bowl with half of the zest you have.


When the avocado is done, remove it from the grill and pile the salsa on top, garnishing with the remaining lime zest and chilli flakes.
