Naturally Sweet: Cacoa Protein Bars

I've tried to replicate commercial protein bars with all natural, organic ingredients to ensure that my snacking stays healthy! Here's a simple 4 ingredient recipe that doesn't need to be cooked and takes just 15 minutes!


Makes 32 small bars

Takes 15 minutes (15 prep)

1 1/2 (225g) cups of cashew nuts

2 1/2 (440g) cups of pitted dates

1/2 cup (50g) of cacao powder

1/4 cup (25g) of hemp protein powder


Blend the cashew nuts into a course grind in a food processor and decant them into a mixing bowl.


Do the same with the dates, pulse blending them (be careful not to burn out the motor as they are very resistant) until the ground date mix begins to clump.


Decant the ground date mix into the same mixing bowl and add the cacao powder and hemp protein powder and begin to kneed the mix together by hand. This should take 5 minutes until the dough is completely mixed.


Decant the dough into a 20cm baking tray and kneed the mix into every corner, then roll it flat (use a small, straight edged beer bottle or small rolling pin)


Cut the flattened dough into small squares of 2-3cm edge and store in an airtight box with sheathes of baking paper in between to prevent the protein bars sticking.
