Naturally Sweet: Ginger Cookie

Start the day right with some fresh fruit and a couple of these deliciously soft cookies that only use 5 ingredients; with ginger to boost your immune system, almonds for lasting energy and no added sugar. Even better? there's no waste!


Makes 6

Takes 35 minutes (15 bake 20 prep/cool)


1/4 cup of pitted dates

1/4 cup of dried apricots

50ml boiled water

1/2 cup of almonds

1/2 tsp of baking powder


Preheat the oven to 180C.


Dice the dry fruit and add to the boiling water, mashing around with a spoon before setting them aside, as submerged as possible, for 5 minutes.


Blend your almonds in a food processor until they're make a course flour, then add the baking powder.


Add the dried fruit and water to the food processor and pulse blend so that the ingredients are mixed and the rehydrated fruit is cut up but not pureed.


Using a tablespoon, lay the batter out on a baking sheet, pressing it to into discs about 10-15cm in diameter and 5-10mm in thickness . This should make 6 cookies.


Bake for 15 minutes then cool for a further 10. Store in the fridge in a sealed container.
