From Within for Soil, Toil & Table at the Lethaby Gallery, Central Saint Martins.

Ferments are our origins. They were the first metabolic act in evolution, and, for humans, marked our shift from nature to culture; yet we have forgotten how foundational they are. As our sharing of the word suggests, human culture is intrinsically tied to fermentation cultures. This work examines that relationship, and how ferments might foment us from within.

From Within explores this through the installation of a live champagne ferment exploring our foundational relationship with fermentation. The thinking behind this display is to juxtapose sterility and diversity in front of the viewer, sparking interest and intrigue, and making them reconsider their relationship with fermentation, and understand more about its integral role in our existence.

The champagne will be bottled and replaced every 2-3 weeks throughout, to be consumed at the end of the end of the show.
